## Planter's Punch

_Ingredients_

- [ ] 1oz fresh lime juice
- [ ] <small>3/4</small>oz Demerara syrup
- [ ] <small>1/4</small>oz St. Elizabeth Allspice Dram
- [ ] 3oz blended aged rum (Jamacia)
- [ ] 2 dashes Agnostura bitters

_Preparation_

1. Add ingredients to mixing tin
2. Add 12oz crushed ice
3. Blend
4. Pour with gated finish into glass
5. OPTIONAL: garnish with mint sprig

## Painkiller

Official Cocktail of the British Virgin Islands

_Ingredients_

- [ ] 2oz (or 3oz or 4oz) blended aged rum (Pusser’s is the traditional choice)
- [ ] 4oz pineapple juice
- [ ] 1oz orange juice
- [ ] 1oz cream of coconut
- [ ] Whole nutmeg

_Preparation_

1. Add liquid ingredients to a cocktail shaker
2. Shake vigorously
3. Pour into a big glass or goblet filled with ice
4. Grate fresh nutmeg on top

_Ingredients_

- [ ] 2oz fresh lemon juice
- [ ] 2oz passion fruit syrup
- [ ] 4oz black blended rum

_Preparation_

1. Add ingredients to mixing tin
2. Add 12oz crushed ice
3. Flash blend
4. Pour with gated finish into glass

## Demerara Dry Float

_Ingredients_

- [ ] <small>3/4</small>oz black blended overproof rum ⑥
- [ ] 2oz fresh lime juice
- [ ] 1 teaspoon fresh lemon juice
- [ ] 1<small>1/2</small>oz passion fruit syrup
- [ ] <small>1/4</small>oz demerara syrup
- [ ] <small>1/4</small>oz Luxardo Maraschino liqueur
- [ ] 1<small>1/2</small>oz blended aged rum ③

_Preparation_

1. Pour black blended rum into a shot glass (serve on the side)
2. Add ingredients, 12oz crushed ice, and a few ice cubes to a mixing tin
3. Flash blend
4. Pour with gated finish into glass

## Mai Tai

_Ingredients_

- [ ] <small>3/4</small>oz fresh lime juice
- [ ] <small>1/4</small>oz rich Mai Tai simple syrup
- [ ] <small>1/4</small>oz orgeat
- [ ] <small>1/2</small>oz Pierre Ferrand dry curaçao
- [ ] 2oz blended aged rum ③

_Preparation_

1. Add ingredients, 12oz crushed ice, and a few ice cubes to a cocktail shaker
2. Shake until frosty
3. Pour entire contents into glass
4. OPTIONAL: garnish with mint sprig and half a squeezed lime

### Rum Recommendations

These few ingredients, in small amounts, go well with nearly
any rum. The drink was originally designed for a particular
variety of robust, long-aged, pot-still rum from Jamaica in
1944. Since that spirit is no longer available, we can
experiment to see what works best.

[Denizen Merchant's Reserve][2], a blend of pot still rums
from Jamaica and Martinique, is a faithful recreation of the
kind of rum used in the original Mai Tai. In lieu of that,
try 1.5oz blended long aged rum and .5oz unaged or lightly
aged pot still rum.
